Sesame Chicken with loads of noodles

For Christmas Abbi received this fun cookbook from her cute friend Kayla and she's been begging to make something from it for dinner.

So we made the sesame chicken.  Well, in the book it was called chicken nuggets with loads of noodles.  If I would have called this chicken nuggets my kids would have thought I was crazy.

It was actually very yummy and not just a meal for kids.  I'm sure we'll be making it again.
When Carter saw that Abbi was helping me of course he wanted to help.  He has this weird obsession with knives and chopping things so he was very excited to chop the green onions.

The messiest and most stressful time was when the kids put the raw chicken on the skewers- a little messy to say the least.

But in the end all the stress... or I mean fun was worth it and everyone enjoyed.

Sesame Chicken with load of Noodles

4 boneless skinless chicken breasts
9 oz spaghetti noodles
2 green onions, chopped
1 T sesame seeds

marinade:
4 T soy sauce
2 T sesame oil
2 T honey
2 inch piece fresh ginger, peeled and sliced
2 large cloves garlic, peeled and sliced

For the marinade, mix together all the ingreidents in a shallow dish.  Add the chicken pieces and turn until coated; cover with plastic wrap.  Chill allowing the chicken to absorb the flavors of the marinade for at least 30 minutes, turning occasionally.  Turn on the broiler to high and grease your broiler pan.  Thread the chicken pieces onto wooden skewers.  Place the chicken sticks on the broiler pan and broil for 4 minutes.  Turn the sticks over, spoon over more marinade, then cook for another 4 minutes.  Cook the noodles, following the package instructions.  Pour the marinade through a strainer into a small pan and boil gently for 1 minute, stirring.  To serve, put the noodles and skewers onto 4 plates.  Spoon the marinade over the noodles and sprinkle with green onions and sesame seeds.
